The delicious
smell of cakes baking in the

place an order as soon as you
walk through the door of
The Foxy Cake Company, the shop
opened a year ago by super chefs
Helen Fox and Alex Wraight.
They specialise in celebration
cakes and in 12 months they have
never made two cakes the same
because each order is made
expressly for the individual
customer. |

All the cakes are
homemade in the kitchen at the back of the
showroom using only the best quality
ingredients - free range eggs, proper butter
and, if it's a chocolate cake, Belgian
chocolate. Usually it's Alex who produces
the basic cake in whatever flavour (or
flavours) have been asked for and Helen who
ices it and is a whiz with her hand-made
sugar decorations.
Helen, 25, and Alex, 29, have a passion for
making scrumptious confections. They'll make
you anything from a spectacular tower of
prettily decorated cup cakes "a wonderful
centre piece for the table" - to a replica
of the castle where you got engaged. |

They still
make elegant white iced
multi-tiered wedding cakes using
traditional rich fruit recipes
but brides in 2009 are more
likely to opt for a cake with
layers of different flavours to
provide every guest with their
yummiest favourite.
The two partners in the business
met when they were students on a
one-year course at Leith's
School of Food and Wine in
London.
Alex was taking a year out from
his job as a vet and Helen, a
graduate with a degree in
biology and nutrition, was ~
following her ambition to be a
top flight pastry chef.

Both went on to gain experience with
different enterprises in their new
profession but then they decided to take the
plunge and open their own cake shop. Now,
having proved they can work together
successfully Alex divides his time between
being a vet and baking cakes - they're
planning to get married. The wedding is
likely to be in October. "The only thing we
can't agree on is what type of cake we
want."
